You guys…I’m really excited about this recipe. I’m really excited about all of my recipes, but this one is definitely, at least in my top ten. These breakfast sandwiches are made with little chickpea flour “egg” patties, so they’re kind of like a vegan version of breakfast sandwiches you might get at some fast food establishments that we shall not name.
So, why is it that I’m so excited? You’d probably think it’s because I dearly miss those eggy breakfast sandwiches I used to eat and I’m all pshyched to have created a vegan version. Well, you’d be wrong. I’m excited because I never actually liked those sandwiches, but I LOVE this one. I know, a little weird.
