Dinner doesn't get much easier than this! Hearty seitan is simmered in savory sauce with garlic, onion, and herbs, then paired up with tender pasta to make this delicious and comforting vegan spin on classic beef and noodles.
Did you eat something like this for dinner when you were growing up? I feel like many of us did! Beef and noodles is one of those classic American dinners that seemed to show up on everyone's dinner table.
This vegan version tastes just like the version I remember from when I was a kid, thanks to the inclusion of seitan, my favorite meat substitute. It combines elements of a couple of my other recipes, including vegan haluski and vegan stroganoff, but it's actually simpler and even easier to throw together than either one.

Ingredients You'll Need
- Pasta. Pasta is basically the same thing as noodles, but without egg. So it's a great substitute for noodles in a recipe like this one! The recipe calls for campanelle (also known as gigli pasta), simply because I find it to be quite noodley in shape and appearance. Feel free to use any variety though. Shells, mafalada, and rotini also work really well as noodles.
- Vegan butter. Earth Balance, Miyoko's and Melt are some popular brands you'll find at most stores. Look for them near where the regular butter is sold.
- Onion.
- Seitan. You can use store-bought or homemade seitan for this recipe. If using my homemade seitan recipe, choose the beef flavor.
- Garlic.
- All-purpose flour.
- Vegetable broth.
- Dried thyme.
- Soy sauce. Tamari or liquid aminos can be substituted if you have either on hand.
- Vegan Worcestershire sauce. Be careful, as most brands of Worcestershire sauce contain anchovy paste. Try Annie's, the Wizard's or Whole Food's brand, all of which are vegan. Or make your own vegan Worcestershire sauce.
- Salt & pepper.
How It's Made

Start by cooking your pasta according to the package directions. Drain it into a colander when it's done. Start your vegan beef and sauce in the meantime.
Melt the butter in a large skillet and add diced onion. Cook the onion for about ten minutes, until it softens and begins to brown.
Add diced seitan and cook it for a few minutes, until it starts to brown in spots, then stir in the flour and garlic and cook the mixture briefly.
Stir in the broth, dried thyme, soy sauce, and vegan Worcestershire sauce. Bring the liquid to a simmer and let it cook for about five minutes, just to meld the flavors and thicken the sauce a bit.
Add the cooked pasta, give it a few stirs, then remove the skillet from heat. Season the mixture with some salt and pepper to taste.
Your vegan beef and noodles is ready to serve!
Leftovers & Storage
Leftovers of this recipe will keep in an airtight container in the fridge for about 4 days. Add a bit of water when reheating if the sauce dries up too much during storage.

- 8 ounces dried campanelle pasta (or pasta shape of choice)
- 2 tablespoons vegan butter
- 1 medium onion, diced
- 16 ounces seitan, cut into ½-inch cubes
- 2 garlic cloves, minced
- 1 tablespoon all-purpose flour
- 1 cup vegetable broth
- 1 teaspoon dried thyme
- 1 tablespoon soy sauce
- 1 tablespoon vegan Worcestershire sauce
- Salt and pepper, to taste
Instructions

Bring a large pot of water to a boil. Add the pasta and cook it according to the package directions. Drain the pasta into a colander when it has finished cooking.

Melt the butter in a large skillet over medium heat, then add the onion. Cook the onion for about 10 minutes, stirring frequently, until it softens and begins to brown.

Stir in the seitan. Cook the seitan with the onion for about 5 minutes, stirring occasionally, until it begins to brown in spots.

Add the garlic and flour. Stir the mixture so that the flour coats the seitan. Cook the mixture for about 1 minute, until the garlic becomes very fragrant.

Stir in the broth, thyme, soy sauce, and Worcestershire sauce. Raise the heat and bring the liquid to a boil. Lower the heat and let the mixture simmer for about 5 minutes, until the sauce thickens slightly.

Stir in the cooked pasta, then remove the skillet from heat.

Season the mixture with salt and pepper to taste.
