    Walnut Carrot Burgers with Spicy Maple Ketchup

    You'll be amazed at how delicious these vegan carrot burgers are! Crunchy walnutes add flavor, while cilantro and lime pack in the flavor. It all gets topped with maple ketchup for a sweet and savory veggie burger experience you'll want to enjoy again and again!

    What I love about veggie burgers is that they can be made from just about anything — or at least anything meatless. Who needs meat when you can make a black bean burger, sweet potato burger, tempeh burger, or mushroom burger?

    Today we're making our veggie burger out of carrots. Sounds kind of iffy, right? You'll be surprised! These carrot burgers are delicious, and have so much more than just carrots going for them. They're loaded with crunchy walnuts and delicious seasonings like cumin, garlic, lime juice and fresh cilantro. Packed with vibrant flavors and nutritious to boot!

    Ingredients You'll Need

    • Carrots. Obviously! We're using fresh, raw carrots for this recipe.
    • Onion.
    • Garlic.
    • Panko breadcrumbs. I use panko breadcrumbs because they're generally vegan. If you can find regular vegan breadcrumbs and would like to use them, go for it!
    • Shelled walnuts. You can substitute with a similar variety of nut if you'd like, such as pecans or hazelnuts.
    • Fresh cilantro. If you're not a fan of cilantro you can leave this out.
    • Cornstarch. This ingredient is important for binding, so don't skip it.
    • Ground flaxseeds.
    • Lime juice. Use freshly squeezed juice for maximum flavor.
    • Ground cumin.
    • Salt.
    • Olive oil. You can use another high-heat oil to grill your carrot burgers if preferred. Coconut oil, avocado oil, and vegetable oil all work.
    • Tomato paste.
    • Maple syrup.
    • Apple cider vinegar.
    • Sriracha sauce. This adds some heat. Skip it to keep your ketchup mild.
    • Burger buns.
    • Toppings. Whatever you like to top your burgers with works here. Lettuce, tomato, sliced onions, pickles, and vegan cheese slices are all great on these burgers.

    How They're Made

    These burgers are super simple to make.

    • Pulse your ingredients in a food processor. Start with just the carrots, onion and garlic, then add all of the remaining burger patty ingredients except for the olive oil. You can add some water if needed.
    • Shape the mixture into patties and grill them in some olive oil. You'll need to cover the patties to ensure that the carrot gets fully cooked.
    • Stuff the carrot patties into buns and devour!

    Tip: Since these are bean-free veggie burgers they're a bit on the delicate side. Handle the patties carefully.

    Leftovers & Storage

    Leftover carrot burgers will keep in an airtight container in the fridge for about 3 days, or in the freezer for about 3 months.

    Ingredients

    For the Walnut Carrot Burgers

    • ½ pound fresh carrots (about 2 large carrots), cut into 2 inch pieces
    • ½ medium onion
    • 2 garlic cloves, minced
    • ½ cup panko breadcrumbs
    • ¼ cup shelled walnuts
    • 2 tablespoons fresh cilantro
    • 2 tablespoons cornstarch
    • 1 tablespoon ground flax seeds
    • 1 tablespoon lime juice
    • 1 teaspoon ground cumin
    • ¼ teaspoon salt plus more to taste
    • ½ tablespoon olive oil

    For the Spicy Maple Ketchup

    • ¼ cup tomato paste
    • 2 tablespoon maple syrup
    • 1 tablespoon apple cider vinegar
    • 1 teaspoon sriracha or to taste

    For Serving

    • 3 burger buns
    • Toppings of choice, such as lettuce and tomato

    Instructions

    Make the Walnut Carrot Burgers

    • Place the carrots, onion and garlic into a food processor bowl. Pulse until finely chopped, stopping to scrape down sides of bowl as needed.
    • Add the panko breadcrumbs, walnuts, cilantro, cornstarch, flax seeds, lime juice, cumin and salt. Blend until completely mixed, stopping to scrape down sides of bowl as needed. Add a splash of water if the mixture seems a little dry.
    • Shape mixture into 3 patties. (see Note)
    • Coat a large skillet with olive oil and place it over medium heat.
    • Working in batches if necessary, place the burger patties in skillet and cover. Cook about 4 minutes, until lightly browned on bottoms. Gently flip, cover the skillet again, and cook another 4 minutes on opposite side.

    Make the Spicy Maple Ketchup

    • Whisk all ingredients together in small bowl.

    Assemble and Serve the Burgers

    • Place a burger inside each bun. Top with spicy maple ketchup and greens.

    Notes

    You could get 4 smaller patties out of this recipe if needed.

        Yup! You can cook and freeze them, or even freeze the carrot mixture before making them into patties. Then just thaw, shape and cook when you're ready. :)
