I’m sure you’ve noticed by now that I have a bit of a thing for creating vegan versions of my favorite takeout dishes at home. Chinese food would be among my favorite types of take out to recreate. This was one of my favorite Chinese takeout remakes. That’s a lot of favorites. Really though, this dish has a lot going for it. It was way simpler than I’d ever have thought, and came together in a mere thirty minutes! It was as delicious as any restaurant version I’ve had. Oh, and it was totally vegan. Can’t always get that with takeout. My version includes plenty of crunchy and flavorful veggies and pan fried tofu.
