    Butternut Squash Black Bean Chimichangas

    Crunchy on the outside, soft and spicy on the inside, these black bean and butternut squash chimichangas are easy to make and loaded with flavor. Totally vegan and baked (not fried!), they're a healthier twist on the Mexican classic that's every bit as comforting and delicious!

    My mom used to make baked chimichangas when I was growing up. They were one of the few meat-oriented dishes that I remember liking, but like so many other meat-based dishes I grew up eating, it wasn't the meat that I really enjoyed — it was the spices and seasonings, and in the case of chimichangas, biting into those crispy layers of baked tortillas. With that in mind, I decided to create a vegan chimichanga recipe with all those things I loved, plus some of my favorite plant-based ingredients in the filling. It was time for black bean butternut squash chimichangas!

    Traditional chimichangas are deep-fried. I don't know about you, but messing around with large quantities of hot oil is the last thing I feel like doing on a weeknight, so we're baking our vegan chimichangas. They're still crispy and delicious and totally crave-worthy, though!

    Ingredients You'll Need

    Below you'll find a list of ingredients in this recipe, with notes and substitutions. Scroll all the way to the bottom of the post to see the full recipe, including the amount of each ingredient.

    • Butternut squash.
    • Olive oil. You can substitute another high-heat cooking oil, if you'd like.
    • Red onion. Yellow onion will do in a pinch.
    • Garlic.
    • Cumin.
    • Black beans. We're using canned black beans to make life easy. If you'd like to use dried black beans, make sure they're soaked and fully cooked. You'll need about 1 ½ cups.
    • Chipotle peppers. These are sold in cans in the international aisle of the grocery store.
    • Adobo sauce. This is the sauce your chipotle peppers will be packed in.
    • Water.
    • Cilantro. Skip this if you're not a fan.
    • Lime juice. Using fresh lime juice will give your filling the best flavor.
    • Salt and pepper.
    • Tortillas. Make sure you're using large, burrito-size flour tortillas. The filling won't fit in anything smaller.
    • Accompaniments. Have fun here and pile on your favorite toppings! Try vegan sour cream, cashew cream, cashew queso, pico de gallo, hot sauce, diced avocado, and/or guacamole.

    How They're Made

    Below is a detailed photo tutorial on how to make this dish. Scroll all the way down if you'd like to skip right to the recipe!

    Prepare. Start by preheating your oven to 400°F and line a baking sheet with parchment paper.

    Roast the squash. Toss your diced butternut squash in olive oil, then spread it on a parchment paper-lined baking sheet and roast it until tender and lightly browned.

    Make the filling. Start by cooking your diced red onion in some olive oil until it starts to soften, then add the garlic and cumin and cook briefly. Roasted squash, black beans, chipotles, adobo sauce, and water all go in next. Let it simmer for a few minutes to reduce the water, then take the skillet off the heat and add chopped fresh cilantro, lime juice, salt, and pepper.

    Tip: Make the filling ahead! It will keep in an airtight container in the fridge for 3 to 4 days, or in the freezer for up to 3 months.

    Roll the chimichangas. They roll up just like burritos! Place some filling in the center, fold the edge closest to you over the filling, fold the sides in, then roll the whole thing away from you to close it up.

    Bake. Place your rolled chimichangas on a baking sheet, repeat the process until all of the filling and tortillas are used, then brush them all over with olive oil. Pop the baking sheet into the oven and bake your chimichangas until crispy and browned.

    Serve. Your baked chimichangas are ready! Pile on the toppings and dig in.

    Variations

    • Squash swaps. Other types of winter squash, such as acorn, delicata, or red kuri will work in place of the butternut squash.
    • Bean swaps. No black beans on hand? Use what you've got! Try kidney beans, pinto beans, cannellini beans, or lentils.
    • Cheesy chimichangas. Sprinkle some shredded vegan cheese over the filling before wrapping.

    Frequently Asked Questions

    Can these be made gluten-free?

    I think so! I haven't tried making these with gluten-free flour tortillas, but I can't see why they wouldn't work.

    Can I use corn tortillas?

    Corn tortillas are far too small to hold enough filling for chimichangas. That said, you can certainly experiment with turning the filling into baked tacos or taquitos using corn tortillas.

    Are these spicy?

    The chipotle peppers do add a kick. Skip them and add a teaspoon of smoked paprika if you'd like a heat-free version.

    How should I store leftovers, and how long will they keep?

    Leftover baked chimichangas will keep in an airtight container in the fridge for about 3 days, or in the freezer for up to 3 months. To reheat, thaw if frozen, then place them on a baking sheet and bake at 400°F until heated through.

    Butternut Squash Black Bean Chimichangas

    Ingredients

    • 1 pound butternut squash peeled and diced (½-inch, about 4 cups)
    • 4 tablespoons olive oil, divided
    • 1 cup diced red onion, about ½ of a medium red onion
    • 3 garlic cloves, minced
    • 2 teaspoons ground cumin
    • 1 (15 ounce/425 gram) can black beans, drained and rinsed
    • 2 chipotle peppers packed in adobo sauce, finely chopped (Note 1)
    • 2 tablespoons adobo sauce, from the can of chipotles
    • ½ cup water
    • ¼ cup chopped fresh cilantro
    • 1 tablespoon lime juice
    • ½ teaspoon salt, plus more to taste
    • ½ teaspoon black pepper
    • 4 large (burrito-sized) flour tortillas

    For Serving

    • Salsa
    • Guacamole or diced avocado
    • Cashew cream or vegan sour cream

    Instructions

    • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
    • Toss the butternut squash cubes in 1 tablespoon of the olive oil. Arrange them on a baking sheet and bake for 20-25 minutes, until tender and lightly browned. Leave the oven on when you remove the baking sheet.
    • Place a large skillet over medium heat and add 1 tablespoon of olive oil. Let the oil heat up for a minute, then add the onion. Cook the onion for about 5 minutes, until it starts to soften, stirring occasionally.
    • Add the garlic and cumin. Cook the mixture for about 1 minute, stirring constantly, until very fragrant.
    • Stir in the butternut squash, black beans, chipotle peppers, adobo sauce, and water. Raise the heat to high and bring the mixture to a boil, then reduce the heat and let the mixture simmer for about 5 minutes, stirring occasionally, until most of the liquid has evaporated.
    • Remove the skillet from heat, then stir in the cilantro, lime juice, salt, and pepper. Taste the mixture and adjust any seasonings to your liking.
    • Place a fresh sheet of parchment paper on your baking sheet. Arrange a tortilla on a work surface, then spoon a fifth of the filling (about â…” cup) in the center. Fold the side closest to you over the filling, tuck in the sides, then roll the tortilla away from you. Place it on the baking sheet, seam side down. Repeat the rolling process for the remaining tortillas and filling.
    • Brush all sides of the unbaked chimichangas with the remaining 2 tablespoons of olive oil, then place them back on the baking sheet with the seam sides down.
    • Bake for about 20 minutes (oven should still be at 400°F), until the tortillas begin to crisp and lightly brown.
    • Serve with toppings of choice, and enjoy!

    Notes

    1. The chipotles add both heat and smoky flavor. For a milder filling, use just 1 pepper or omit them entirely and substitute 1 teaspoon smoked paprika. For extra heat, add another chipotle pepper.

      These turned out far more delicious than I'd anticipated. Made only two changes: left out the sweetener (def. did not need), and added some cheddar cheese before rolling (we're not vegans) to give it a nice gooey consistency. My vegetarian daughter arrives home from college next week and I will be sure to make these for her. Truly a hit. Thank you!!!!

      I made these tonight and they were just amazing. Had no chipotle chillies or adobe paste so substituted 6 finely chopped jalapeños and 1 tsp chipotle paste and it worked out fine. It was really easy too. I’ve already has requests to make them again from the rest of the household!

      This was my first time using chipotle peppers in adobo sauce, and I did not realize they were this spicy! I normally don't mind a bit of a kick to my food, but this was way too much, so a warning to others who may not like too much spice. The flavors otherwise were good enough that I will try this again, with maybe half the amount of peppers and adobo sauce. Now to go get rid of my heartburn...

      I’m not the biggest fan of butternut squash. It’s fine, but I will choose something else if given the option. You have any suggestions for a good substitute? I love chimichangas!

        You could use all kinds of things! Roasted cauliflower, potatoes, sweet potatoes or even just some cooked chickpeas would all work well in place of the squash. I'd love to hear how any of these variations turn out if you try them!

      I've had this recipe on my todo list for like a month. I finally bought the chipotle peppers to go with it and the weather feels like fall. I am so excited But I have one question:Do you peel the squash? I have varying luck when it comes to the toughness of the peel so I tend to get rid of it.

      I don't blame you on the baking vs frying. I am not opposed to having a fry daddy around or using just a crapton of oil, but I just don't do it enough for it to make sense! Even outside the mountains of bad stuff I would be putting into my body, it is a matter of practicality. I don't need another thing around my kitchen.

      This looks sooo good! I've been making bean and maitale mushroom chimichangas for about three years now. I'm alone so i make half a dozen burritos and freeze five. Defrost in the fridge overnight or add thirty minutes to the bake time.

      I am SO excited to try this recipe! The dish looks absolutely heavenly from the photos; the colors are beautiful (and so suitable for fall!).

      Do you think the filling would keep well for a few days, if I were to make a large batch?

      I think most people (at least Americans) bake their chimichangas. I know I did when growing up. I prefer to bake since deep frying scares me. I leave that for people at restaurants to deep fry my food. lol.
