This mojito smoothie is packed with the zingy flavor combination of mint and lime, while rich and creamy thanks to smooth blended bananas and hemp seeds.
Ahhh...here it is, the first day that feels like fall and I've got an icy-cool, refreshing smoothie post planned. Maybe it's sunnier where you are, or maybe you're indoors where it's warm, but I'm sitting out on my front porch in the crisp air writing this, and well, it just seems a little odd.
Aside from the chill factor though, I'd be glad to slurp up one of these today. It was certainly rich and comforting, and though it might not be immediately apparent, this is part of my September VeganMoFo harvest theme.
The garden is a total mess at this point. Fortunately, I did get some good fresh produce out of it (namely the tomatoes and cucumber, both of which went berzerk), even if some of the plants didn't perform quite as well as expected (zucchini and lettuces were both fails). I ended up with a ton of mint. The plant is still going strong, and as luck would have it, mint is one of those things I rarely use. I guess this is a blessing, as it pushed me to explore a bit, and I didn't do half bad, If I do say so. (More mint inspiration here.) This is probably my last mint post of the season though, because mint just isn't one of those flavors that inspires apple bobbing and pumpkin carving. So, get it while you can, and if fall's already hit your neck of the woods, go inside where it's warm and drink this. You even can pretend it's the middle of summer, if that's what you're into.
Creamy Hemp Mojito Smoothie
- 2 frozen ripe bananas
- ¼ cup fresh mint leaves packed
- 2 tbsp. hulled hemp seeds
- 1 ½ tbsp. lime juice
- 1 tsp. lime zest
- 1 tsp. vanilla extract
- 1 cup unflavored soy or almond milk
Place bananas in blender and blend until smooth, stopping to scrape down the sides as needed.
Add mint, hemp seeds, lime juice, zest and vanilla extract. Pulse a few times to break everything up and blend.
Add milk and blend until smooth.
