    Vegan Chocolate Mug Cake

    Satisfy your sweet cravings in minutes with this vegan chocolate mug cake. You can make it with just a handful of ingredients that you probably have on hand!

    I try to limit myself to only making desserts when I know I have someone to feed them to. I live in a two person household, so having a whole vegan chocolate cake sitting around can be a bit...problematic.

    Well I haven't had as many people to pass my desserts off on over the last year, for obvious reasons. So we haven't had as many sweets around here, which means sometimes I get a craving and there's not much around to satisfy it.

    I bet you already have all of these on hand!

    • Flour. I've only tested the recipe with all-purpose wheat flour, so I can't guarantee results with anything else.
    • Cocoa powder. Use the unsweetened variety.
    • Baking powder.
    • Cinnamon. This is totally optional, but really adds to the flavor.
    • Salt.
    • Non-dairy milk. Just about any variety will work, just make sure it's unflavored and unsweetened.
    • Maple syrup. You could also use another liquid sweetener, such as agave.
    • Oil. The recipe calls for canola, but you can use whatever variety of baking oil you have on hand!
    • Vanilla. You can leave this out if you don't have any on hand.
    • Chocolate chips. These are also optional, but highly recommended. Make sure they're vegan! I used Enjoy Life brand.

    How to Make Vegan Mug Cake

    The following is a detailed photo tutorial on how to make this dish. Scroll down if you'd prefer to skip right to the recipe!

    Grab a 10 ounce or larger microwave-safe mug.

    • Stir your dry ingredients together (flour, cocoa, baking powder, cinnamon and salt).
    • Pour in the liquid ingredients (milk, maple syrup, oil, and vanilla).
    • Stir everything together until completely mixed.
    • Stir in your chocolate chips.

    • Zap your cake in the microwave for a minute.
    • Take a look at it. Does in look done? You can carefully touch the top to see if it's set. If not, keep microwaving it in 15 second intervals until it's ready.

    Let it cool for a minute or so, then dig in! I topped mine with a spoonful of vegan vanilla ice cream.

    Vegan Mug Cake Tips & FAQ

    • Can this cake be made gluten-free? I'm not sure, but I suspect that an all-purpose gluten-free blend like Bob's Red Mill's would work.
    • Where can I find vegan chocolate chips? I used Enjoy Life Dark Chocolate Chunks, which my regular supermarket carries. You can also try places like Whole Foods.
    • Not a fan of chocolate cake? Try my pumpkin mug cake!
    • What kind of vegan ice cream is that in the photos? It's So Delicious cashewmilk ice cream, and it's scrumptious!

    Chocolate Vegan Mug Cake

    Ingredients

    • ¼ cup all-purpose flour
    • 2 tablespoons cocoa powder
    • ¼ teaspoon baking powder
    • Pinch salt
    • Pinch cinnamon (optional)
    • 3 tablespoons non-dairy milk
    • 2 tablespoons maple syrup
    • 1 tablespoon canola oil (or baking oil of choice)
    • ¼ teaspoon vanilla extract
    • 2 tablespoons vegan chocolate chips
    US Customary - Metric

    Instructions

    1. Stir the flour, cocoa, baking powder, salt and cinnamon together in a microwave-safe mug.

    2. Add the milk, maple syrup, oil, and vanilla. Stir until completely blended.

    3. Stir in the chocolate chips.

    4. Microwave the mug for 1 minute, then check to see if it's done. If not, continue microwaving in 15 second intervals.

    5. Let the cake cool briefly, the serve it inside the mug with a spoon. Be careful when digging in, as mug cakes can be very ho inside! Optionally top it with a scoop of vegan vanilla ice cream.
