This vegan shakshuka is made with spinach and silken tofu in a smoky tomato and red pepper sauce.

HOW IT'S MADE 1. Cook peppers, onion, garlic and spices in olive oil.

2. Add tomatoes.  3. Simmer.

4. Add spinach. 5. Continue simmering.

6. Add silken tofu. 7. Simmer some more.
