- ½ cup vegan mayonnaise
- ½ cup unflavored and unsweetened vegan yogurt
- ¼ cup olive oil
- 2 tablespoons lemon juice
- 1 cup flat leaf parsley, chopped
- ¼ cup fresh chives, chopped
- ¼ cup fresh tarragon, chopped
- 1 garlic clove, minced
- 2 tablespoons capers
- ⅛ teaspoon salt, plus more to taste
- ¼ teaspoon black pepper, plus more to taste
- If your blender isn't high-powered, I recommend first placing the parsley, chives, tarragon, garlic, and capers into the blender, blending them up, then adding the remaining ingredients.
- This recipe makes about 1 ½ cups of dressing.
