Ingredients

For the Falafel

  • 1-14 oz. can chickpeas, drained and rinsed
  • ½ red onion, coarsely chopped
  • 3 garlic cloves, minced
  • ¼ cup fresh cilantro leaves, lightly packed
  • 1 tbsp. lemon juice
  • 1 tbsp. ground cumin
  • 1 tsp. ground coriander
  • ¼ tsp. salt
  • 1 tbsp. olive oil, divided

For the Roasted Veggies

  • ½ red onion, sliced into strips
  • 1 small red bell pepper, sliced into strips
  • 1 tbsp. olive oil

For the Crust

  • 1 lb. vegan pizza dough
  • about 1 tbsp. olive oil

For the Harissa Tomato Sauce

  • 1 ½ cups crushed tomatoes
  • 1-2 tbsp. harissa, or to taste
  • 1 tsp. granulated sugar, or sweetener of choice
  • salt and pepper to taste

For the Tahini Sauce

  • 2 tbsp. tahini
  • 1 tbsp. lemon juice
  • 1 garlic clove, minced
  • 2-3 tbsp. water
  • salt to taste

For Serving

  • about 1 cup arugula or baby spinach

Instructions

Make the Falafel

  • Preheat oven to 400°. Line a baking sheet with parchment and brush lightly with olive oil.
  • Place all falafel ingredients into food processor bowl and pulse until well blended.
  • Roll mixture into 1 inch balls and arrange on baking sheet. The mixture will be soft and delicate, but you should be able to roll it. If it seems too soft, sprinkle in a few panko breadcrumbs. Flatten balls slightly and brush tops with olive oil. Bake 30 minutes, flipping halfway through, until browned on both sides.

Prepare the Veggies

  • Toss veggies with olive oil and arrange on baking sheet or in roasting pan. Place in the oven with falafel and bake until browned in spots, flipping once, about 25 minutes.

Prepare the Crust

  • On a lightly floured surface, roll pizza dough into a 14 inch circle and place on baking sheet or pizza stone. Brush the top lightly with olive oil. Place in oven with falafel and veggies. Bake 20 minutes, or until browned and puffy.

Make the Harissa Tomato Sauce

  • While everything bakes, place sauce ingredients into a small saucepan and place over medium heat. Bring to a simmer and allow to cook just until the sauce thickens a bit, about 5 minutes. Season with salt and pepper to taste.

Make the Tahini Sauce

  • Stir all ingredients together in a small bowl, thinning with as much water as needed. Season with salt to taste.

Assemble the Pizza

  • Spoon tomato harissa sauce over crust. Top with roasted veggies, then greens, then falafel. Drizzle with tahini sauce. Serve.
