Ingredients
3ripe Bartlett or D'Anjou pearspeeled and diced
1tbsp.grated fresh ginger
3tbsp.lemon juiceabout 1 lemon
2tbsp.brown sugar
2tbsp.water
1tsp.ground cinnamon
ΒΌtsp.salt
Instructions
Place all ingredients in small saucepan and stir to blend. Place over medium heat and bring to a boil.
Lower heat and cover. Simmer, covered, for 20 minutes.
Uncover and allow to simmer for another 25-30 minutes, until liquid is thick and syrupy.
Transfer to blender or food processor and blend until smooth, stopping to scrape down the sides of the bowl or pitcher as needed.
Allow to cool and transfer to an airtight storage container.
Notes
Makes 1 heaping cup. Refrigerate for up to 1 week.
