Ginger Pear Butter

This ginger pear butter is sweet, creamy and packs a mild kick. Perfect for a fall breakfast, it goes deliciously on toast, swirled into oatmeal, or eaten straight from a spoon!

Ingredients

  • 3 ripe Bartlett or D'Anjou pears peeled and diced
  • 1 tbsp. grated fresh ginger
  • 3 tbsp. lemon juice about 1 lemon
  • 2 tbsp. brown sugar
  • 2 tbsp. water
  • 1 tsp. ground cinnamon
  • ΒΌ tsp. salt

Instructions

  • Place all ingredients in small saucepan and stir to blend. Place over medium heat and bring to a boil.
  • Lower heat and cover. Simmer, covered, for 20 minutes.
  • Uncover and allow to simmer for another 25-30 minutes, until liquid is thick and syrupy.
  • Transfer to blender or food processor and blend until smooth, stopping to scrape down the sides of the bowl or pitcher as needed.
  • Allow to cool and transfer to an airtight storage container.

Notes

Makes 1 heaping cup.
Refrigerate for up to 1 week.
