Preheat the oven to 400°.

Stir all of the sauce ingredients together in a small bowl, and then pour it into the bottom of a 9 x 13 inch baking dish.

Place the beans, cornmeal, onion, garlic, lime juice, olive oil, chipotle chile powder, cumin, and cilantro into the bowl of a food processor and pulse until finely chopped and well incorporated. Season the mixture with salt and pepper to taste and tranfer it to a bowl.

Stuff the pepper halves with the bean mixture, then place the stuffed pepper halves into the baking dish with the sauce.

Place the baking dish into the oven and bake for 30 minutes, until the peppers are tender and the sauce is bubbly.

Divide the peppers and sauce onto plates and top with cauliflower nacho cheese sauce and fresh cilantro. Serve.
