Ingredients
  • ½ cup vegan mayonnaise
  • ½ cup unflavored and unsweetened vegan yogurt
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 1 cup flat leaf parsley, chopped
  • ¼ cup fresh chives, chopped
  • ¼ cup fresh tarragon, chopped
  • 1 garlic clove, minced
  • 2 tablespoons capers
  • teaspoon salt, plus more to taste
  • ¼ teaspoon black pepper, plus more to taste
Instructions
  1. Place all ingredients into a blender. (Note 1)

  2. Blend until smooth.

  3. Taste-test the dressing and adjust any seasonings to suit your taste. Blend again briefly to incorporate anything you've added.

  4. Serve.

Recipe Notes
  1. If your blender isn't high-powered, I recommend first placing the parsley, chives, tarragon, garlic, and capers into the blender, blending them up, then adding the remaining ingredients.
  2. This recipe makes about 1 ½ cups of dressing.
