This Afghan-inspired split pea dal is made with creamy yellow split peas simmered in ginger and warming spices.

INGREDIENTS – Olive oil – Onion – Garlic – Ginger – Ground cumin – Ground turmeric – Yellow split peas – Vegetable broth – Whole cloves – Cinnamon stick – Lemon juice – Sambal oelek – Salt and pepper – Fresh cilantro

HOW IT'S MADE 1. Sweat the onion in oil. 2. Add garlic, ginger and ground spices.

3. Add broth, split peas, cinnamon and cloves. 4. Simmer until peas are soft.

5. Remove from heat and add lemon juice, sambal oelek, salt and pepper.

6. Serve over rice with fresh cilantro on top.
