These vegan stuffed peppers are filled with an Italian-spiced mix of lentils and rice, and topped with zesty marinara sauce.

HOW THEY'RE MADE 1. Sweat onion and garlic in olive oil.

2. Add rice, broth and herbs. 3. Cover and simmer until the rice is tender.

4. Add cooked lentils and diced tomatoes.

5. Roast pepper halves until blistered.

6. Stuff the pepper halves and roast them in marinara sauce.

7. Serve with vegan Parmesan cheese and fresh herbs.
