HOW IT'S MADE 1. Char the aromatics over a flame or under a broiler.

2. Toast whole spices in a pot.

3. Add broth and simmer.

4. Sauté shiitake mushrooms.

5. Pan-fry tofu. 6. Add hoisin sauce.

7. Arrange cooked noodles, tofu, veggies, mushrooms and fresh herbs in bowls, then ladle in the broth.
