These easy vegan mashed potatoes are super creamy, perfectly fluffy, & absolutely delicious!

HOW TO MAKE VEGAN MASHED POTATOES: 

Prep the potatoes. Peel and cut them into 1 to 2 inch chunks, place them into a colander and rinse them with cold water.

Boil the potatoes. Place your potatoes into a pot & cover with cold water.  Warm up your milks & butter. Mix the coconut milk & butter together & warm slightly. You want them just warm enough to melt the butter.

Mash the potatoes. The recipe calls for a potato masher, but you can use an electric mixer too, but be careful not to overmix as your potatoes will come out gummy. Add the milk & butter. Mix and season.

Creamy & fluffy mashed potatoes that are completely dairy-free.
