Prep the potatoes. Peel and cut them into 1 to 2 inch chunks, place them into a colander and rinse them with cold water.
Boil the potatoes. Place your potatoes into a pot & cover with cold water. Warm up your milks & butter. Mix the coconut milk & butter together & warm slightly. You want them just warm enough to melt the butter.
Mash the potatoes. The recipe calls for a potato masher, but you can use an electric mixer too, but be careful not to overmix as your potatoes will come out gummy.Add the milk & butter.Mix and season.
