How to make Vegan Tofu Curry

1. Brown the tofu  in a skillet. 2. Cook onion until softened  & then stir in the garlic, ginger, curry powder, & garam masala.

3. Stir in the tomato paste and cook for about 1 minute. 4. Stir in the broth and the cooked tofu and bring to a boil.

5. Lower the heat & simmer for 15 minutes. 6. Stir in the water & cornstarch & simmer until thickened.  7. Stir in the peas & serve the curry over rice with cilantro & cashews.
