- 2 cups diced (¼-inch) mango (about 2 large or 3 medium mangoes)
- 1 cup diced red bell pepper (about 1 medium pepper)
- ½ cup finely chopped cilantro
- ¼ cup diced red onion
- 1 ½ tablespoons freshly squeezed lime juice
- 1 jalapeño pepper, seeded and minced
- Salt and pepper, to taste
Stir the mango, bell pepper, cilantro, onion, and jalapeño together in a large mixing bowl.
Add the lime juice and stir the mixture well.
Taste-test and season with salt and pepper to taste. You can also add more lime juice or adjust any other seasonings to your liking.
Serve immediately or chill for later.
