Grilled Peach Sandwich with Basil & Thai Peanut Sauce

Ingredients

For the Thai Peanut Sauce

  • 2 tbsp. creamy natural peanut butter
  • 1 tbsp. agave
  • or maple syrup
  • ½ tbsp. soy sauce or tamari
  • ½ tbsp. lime juice

For the Grilled Peach Sandwich

  • 2 slices good sandwich bread
  • 1 small or ½ large peach sliced thin
  • 2 tbsp. fresh basil leaves
  • 1-2 tsp. olive oil

Instructions

  • Whisk peanut sauce ingredients together in small bowl. Thin with a bit of water if desired, keeping in mind that it will soften up when grilled.
  • Slather bread slices with peanut sauce, then stuff with peach slices and basil leaves.
  • Coat a medium flat-bottomed skillet with oil and place over medium heat. Place sandwich into skillet and cook until browned on bottom, about 3-4 minutes. Flip and cook until browned on opposite side, 3-4 minutes.
  • Serve.
