Garlic and Dill Hemp Cheese

This luxurious vegan hemp cheese is made from creamy blended hemp seeds and flavored with zippy garlic and fresh dill.

Ingredients

  • 1 cup hulled hemp seeds
  • 2 garlic cloves
  • 3 tbsp. lemon juice about 1 lemon
  • 2 tbsp. unflavored almond or soy milk
  • 2 tbsp. chopped fresh dill
  • ¼ tsp. salt

Instructions

  • Place hemp seeds in food processor. Blend to a thick paste, stopping to scrape down the bowl as needed. Blending may take a few minutes.
  • Add garlic and lemon juice. Blend some more. The seeds should form into a thick, glossy mass.
  • Add milk, dill and salt. Blend to a smooth, creamy cheese.

Makes about ⅔ cup.
