Dijon & Herb Potato Salad

This scrumptious mayo-free potato salad is made with tender red potatoes and fresh herbs dressed in a refreshing Dijon vinaigrette. Perfect for cookouts, this easy side dish comes together in a flash and is full of flavor!

Ingredients

  • 2 pounds small red potatoes, halved
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • 1 tablespoon finely chopped shallot (about ½ of a small shallot)
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon organic granulated sugar
  • ½ teaspoon salt, plus more to taste
  • ¼ cup finely chopped fresh parsley
  • ¼ cup finely chopped fresh chives
  • ¼ cup finely chopped fresh dill
  • Black pepper, to taste

Instructions

  • Place the potatoes into a large pot and cover them with water.
  • Place the pot over high heat and bring the water to a boil.
  • Boil the potatoes until fork tender, about 15 minutes.
  • Drain the potatoes into a colander. Return them to the pot and let them cool a bit while you prepare the dressing.
  • Whisk the oil, vinegar, shallot, Dijon mustard, sugar, and ½ teaspoon of salt together in a small bowl or liquid measuring cup.
  • Place the potatoes into a large mixing bowl. Add the parsley, chives, and dill.
  • Pour the dressing over the potatoes and herbs, and toss everything to evenly distribute the ingredients and coat the potatoes.
  • Season the salad with salt and pepper to taste.
  • Serve immediately or chill.
