Dijon & Herb Potato Salad
This scrumptious mayo-free potato salad is made with tender red potatoes and fresh herbs dressed in a refreshing Dijon vinaigrette. Perfect for cookouts, this easy side dish comes together in a flash and is full of flavor!

- 2 pounds small red potatoes, halved
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 1 tablespoon finely chopped shallot (about ½ of a small shallot)
- 1 tablespoon Dijon Mustard
- 1 teaspoon organic granulated sugar
- ½ teaspoon salt, plus more to taste
- ¼ cup finely chopped fresh parsley
- ¼ cup finely chopped fresh chives
- ¼ cup finely chopped fresh dill
- Black pepper, to taste
Place the potatoes into a large pot and cover them with water.
Place the pot over high heat and bring the water to a boil.
Boil the potatoes until fork tender, about 15 minutes.
Drain the potatoes into a colander. Return them to the pot and let them cool a bit while you prepare the dressing.
Whisk the oil, vinegar, shallot, Dijon mustard, sugar, and ½ teaspoon of salt together in a small bowl or liquid measuring cup.
Place the potatoes into a large mixing bowl. Add the parsley, chives, and dill.
Pour the dressing over the potatoes and herbs, and toss everything to evenly distribute the ingredients and coat the potatoes.
Season the salad with salt and pepper to taste.
Serve immediately or chill.
