Comforting Vegan Miso Soup

- 4 cups water
- 1 (4 inch by 4 inch or 10 gram) piece dried kombu
- ¼ cup white (shiro) miso paste
- 8 ounces silken tofu, cut into ½-inch cubes
- 2 scallions, chopped
Place the water and kombu into a small saucepan and place it over high heat.
Bring the water to a boil.
Remove the pot from heat, cover it and allow the kombu to steep for 10 minutes.
After 10 minutes, remove the lid from the pot and remove the kombu.
Ladle a small amount of the hot liquid from the pot and into a small cup or container. Add the miso and whisk until smooth.
Pour the miso mixture into the pot and stir in the tofu and scallions.
Ladle into bowls and serve immediately.
