Ingredients
For the Peanut Butter Chia Pudding
  • 1 cup unflavored soy or almond milk
  • 1/4 cup chia seeds
  • 1/4 cup creamy natural peanut butter
  • 2-3 tbsp. maple syrup to taste
  • pinch salt
For the Cinnamon Simmered Apples
  • 2 apples pick a medium-sweet variety, such as Gala or Cortland, peeled and diced
  • 2 tbsp. water plus extra
  • 2 tbsp. maple syrup
  • 1 tsp. lemon juice
  • 1 tsp. ground cinnamon
  • pinch salt
Instructions
Make the Peanut Butter Chia Pudding
  1. Place all ingredients in a mason jar (or other sealable container) and stir well. Cover and optionally give it a good shake to ensure everything is blended.
  2. Refrigerate overnight.
Make the Cinnamon Simmered Apples
  1. Place all ingredients into a small saucepan and stir to incorporate.
  2. Place over medium heat and bring to a simmer. Lower heat and allow to simmer until apples are tender and most of the liquid has cooked off, about 10 minutes, stirring occasionally. Add a few more splashes of water during cooking if the mixture becomes too dry.
Assemble the Parfaits
  1. Arrange pudding and apples in layers in mason jars or parfait glasses. Or just throw everything into a bowl if you don't care about being fancy.
  2. Serve.
