Ingredients
For the Tofu
1tbsp.horseradish mustard
1tbsp.white wine vinegar
1tbsp.olive oil
½lb.extra firm tofudrained and pressed
For the Chard
1tbsp.olive oil
½oniondiced
2garlic clovesminced
1bunch swiss chardleaves and stems, sliced
1tbsp.horseradish mustard
½tbsp.white wine vinegar
½tsp.salt
½tsp.pepper
Instructions
Prepare the Tofu
Whisk mustard and vinegar together in small bowl.
Cut tofu into ½" thick slabs
Heat olive oil in medium skillet over medium-high heat. Add tofu slabs and cook until crispy and brown, about five minutes on each side.
Brush the top of each tofu slab with mustard-vinegar mixture. Flip and cook the mustard side until a crust forms. Brush the other side, flip and repeat.
Remove tofu from skillet and set aside.
Prepare the Chard
Add your other tablespoon of oil to skillet and lower heat to medium.
Add onion and sauté until softened, about five minutes.
Add garlic and sauté another minute.
Add chard, mustard, vinegar, salt and pepper. Sauté until chard is completely wilted, about three minutes.
