1. Sweat diced onion and bell pepper oil. Add seitan and cook 5 minutes. 2. Add garlic, cilantro, and cumin. 3. Add broth, potatoes and sweet potatoes. Simmer for about 5 minutes.

4. Stir in sliced plantain and let it simmer with the stew for about 10 minutes. 5. Stir in small sections of corn on the cob, along with tomato paste.  6. Continue simmering the stew until everything is tender — the potatoes, sweet potatoes, plantains, and corn. 

7. Season with lime juice and salt & pepper to taste.

8. Ladle into bowls and serve!
