This vegan noodle casserole is made with veggies, noodles, creamy sauce and crispy panko topping!

HOW IT'S MADE 1. Blend raw cashews with water.

2. Sauté mushrooms in vegan butter.

3. Sweat onion, carrots and celery in vegan butter. 4. Add minced garlic and flour.

5. Add cashew mixture, cooked mushrooms, non-dairy milk, bouillon, and thyme. 6. Simmer.

7. Combine the sauce mixture with cooked pasta and peas in a casserole dish. 8. Bake and sprinkle with panko breadcrumbs.

9. Let the casserole sit for a few minutes before serving.
