1. Cook diced carrots and white parts of scallions in some hot oil. 2. Add garlic and sauté briefly. 3. Add rice, soy sauce, oysters sauce and hot sauce. 4. Stir-fry everything for a few minutes.
5. Add (thawed) frozen peas and green parts of scallions. Continue stir-frying. 6. Remove from heat and add sesame oil.
7. Divide onto plates and serve!
