These vegan cowboy cookies are packed to the max with delicious fillings!

HOW THEY'RE MADE 1. Stir non-dairy milk and ground flaxseed together in a small container.

2. Whisk dry ingredients together in a large bowl.

3. Cream vegan butter, sugars, flax egg, vanilla, and cider vinegar together with an electric mixer.

4. Add the dry ingredients.

5. Stir in oats, coconut, pecans and chocolate chips.

6. Drop dough balls on a baking sheet and bake.
