HOW THEY'RE MADE 1. Cut the corn from the cob.

2. Combine the sauce ingredients.

3. Sweat red onion in olive oil.

4. Add garlic and cook it briefly with the onion.

5. Add corn and cook until browned in spots.

6. Add the sauce and simmer briefly.

7. Remove from heat and add fresh cilantro.

8. Stuff into shells with toppings.
