1. Sweat diced onion, carrots and peppers in some hot oil, until they begin to soften up. 2. Add garlic and spices. Cook everything until the garlic and spices become very fragrant.

3. Add your beans and tomatoes to the pot. Bring the chili up to a simmer and let it cook for at least a half hour. 4. Stir in some thawed frozen corn during the last minute or so.

5. Remove the pot from heat and season with salt & pepper to taste.

6. Ladle into bowls and serve!

Variation: This chili can be ready in about half the time if you make it in your Instant Pot!
