  • 1-14 oz. can diced tomatoes
  • 1-14 oz. can crushed tomatoes
  • 1 cup vegetable broth
  • 3 cups diced butternut squash, about half a medium-sized squash
  • 1 large apple, Gala or Cortland work well, peeled, cored and diced
  • 2 tbsp. maple syrup
  • 1 tbsp. chili powder
  • 2 tsp. ground cumin
  • 1 tsp. smoked paprika
  • ½ tsp. ground cinnamon
  • ¼ tsp. ground nutmeg
  • 1-14 oz. can chickpeas, drained and rinsed

Instructions
  1. Coat the bottom of a large pot with oil and place over medium heat. Add onion and sauté until softened, about 5 minutes. Add garlic and cook 1 minute more.
  2. Add crushed and diced tomatoes, broth, butternut squash, apple, maple syrup, chili powder, cumin, smoked paprika, cinnamon and nutmeg. Stir a few times and raise heat to medium-high. Bring to a simmer. Lower heat and allow to simmer, uncovered, until squash is tender, about 35-40 minutes, stirring occasionally. Add a bit of water if mixture becomes too thick during cooking.

  4. Ladle into bowls and serve with your favorite chili toppings.
