Summer Fruit and Quinoa Salad with Coconut Ginger Lime Poppy Seed Dressing

Fresh summer berries, peaches and kiwi dressed in a rich coconut-lime dressing go into this refreshing fruit and quinoa salad.

Ingredients
  • 2 ripe peaches diced
  • 2 ripe kiwi fruits peeled and sliced
  • 2 cups fresh strawberries hulled and sliced
  • 1 cup fresh blueberries
  • 4 cups cooked quinoa
  • ¼ cup canned coconut milk
  • ¼ cup fresh lime juice
  • 2 tbsp. maple syrup
  • 2 tsp. lime zest
  • 2 tsp. poppy seeds
  • ½ tsp. fresh grated ginger
  • pinch salt
  • mint sprigs for garnish (optional)
Instructions
  1. Place peaches, kiwi, strawberries, blueberries and quinoa in medium bowl and toss a few times.
  2. Stir coconut milk, lime juice, maple syrup, lime zest, poppy seeds, ginger and salt together in small bowl.
  3. Pour dressing over fruit and toss again until fruit and quinoa are evenly coated. Garnish with mint sprigs and serve immediately.
