Place peaches, kiwi, strawberries, blueberries and quinoa in medium bowl and toss a few times.

Stir coconut milk, lime juice, maple syrup, lime zest, poppy seeds, ginger and salt together in small bowl.

Pour dressing over fruit and toss again until fruit and quinoa are evenly coated. Garnish with mint sprigs and serve immediately.
