This flavorful mint couscous is studded with sweet dried apricots, crunchy almonds and spicy harissa baked tofu.

Ingredients
For the Baked Harissa Tofu
1lb.extra firm tofudrained, pressed at least 15 minutes and cut into ½ inch cubes
2tbsp.harissa
2tbsp.lemon juice
2tsp.olive oil
dash salt
For the Couscous
1-10oz.package couscousabout 1 ½ cups
¼cuplemon juice
2tbsp.olive oil
1tbsp.maple syrup
1garlic cloveminced
¼tsp.salt
¼tsp.pepper
½cupdried apricotsfinely chopped
¼cupsliced or slivered almonds
¼cupfresh mint leaveschopped
2scallionschopped
extra harissafor topping
Instructions
Make the Baked Harissa Tofu
Preheat oven to 400°. Line a baking sheet with parchment paper.
Stir together harissa, lemon juice, olive oil and salt in a small bowl.
Arrange tofu cubes in a single layer on baking sheet. Brush with half of harissa mixture. Bake 20 minutes, gently turn and brush with other half of harissa mixture. Bake another 20 minutes. Remove from oven.
Make the Couscous
Prepare couscous according to package directions. Stir in lemon juice, olive oil, maple syrup, garlic, salt, pepper, apricots, almonds, mint and scallions. Stir in baked tofu.
