This juicy broiled grapefruit is topped with a sweet cinnamon-ginger brown sugar mixture and dollops of whipped coconut cream!

Ingredients
For the Broiled Grapefruits
  • ¼ cup brown sugar
  • ½ tsp. ground cinnamon
  • ½ tsp. powdered ginger
  • 2 Florida dark red grapefruits or your favorite variety of Florida grapefruit
For the Whipped Coconut Cream
  • 1 can coconut cream or coconut milk refrigerated overnight (or longer)
  • agave or maple syrup to taste
Instructions
Prepare the Broiled Grapefruits
  1. Turn on oven broiler to preheat.
  2. In small bowl, stir together brown sugar, cinnamon and ginger.
  3. Slice grapefruits in half and remove any visible seeds. Arrange halves, cut sides up, on baking sheet. Sprinkle tops evenly with brown sugar mixture.
  4. Place under broiler until brown sugar is melted and bubbly, about 6-8 minutes. Watch carefully to avoid burning.
Prepare the Whipped Coconut Cream
  1. Open can of coconut milk or cream. It should have separated into thick white solids (coconut cream) and liquid (coconut water). Empty solids into small mixing bowl and discard water (or save for another use). Blend with electric mixer on high speed until light and fluffy, about 1 minute. Add a few dashes of agave or maple syrup and bled again just until mixed.
Serve
  1. Top grapefruit halves with whipped coconut cream.
