Coconut Butter Whiskey 'Nog Vegan Snowballs

These vegan snowballs are made with coconut butter, walnuts, lots of nutmeg and whiskey, making them taste like an edible vegan version of holiday eggnog.

  1. Place dates in small bowl and cover with whiskey. Soak 10-15 minutes, until softened a bit.
  2. Meanwhile, place 2 ½ cups coconut in food processor and blend until smooth, stopping to scrape down sides of bowl as needed. This may take 15-20 minutes.
  3. Remove dates from whiskey and add to food processor bowl, along with 2 tablespoons of whiskey (same whiskey used to soak dates), vanilla and nutmeg. Blend again until smooth, stopping to scrape down sides of bowl as needed.
  4. Add walnuts and pulse a few times to blend.
  5. If mixture seems to soft to roll at this point, refrigerate for 30-60 minutes.
  6. Roll into 1 inch balls, then roll in remaining ½ cup coconut. You should get 20-24 snowballs.
Recipe Notes

You will have some leftover whiskey from soaking the dates. Drink it, save it, or use it in another recipe, like this one. Or this one.
