Ingredients
  • 2 tablespoons olive oil
  • 1 onion sliced
  • 1 pound butternut squash cut into ½ inch cubes (about 4 cups)
  • 2 teaspoons old bay seasoning, or just salt and pepper to taste
Instructions
  1. Heat oil in a large skillet over medium-high heat. Add onion and butternut squash, onion and old bay.
  2. Flip a few times to distribute the ingredients and coat everything with oil.
  3. Continue cooking for 15-20 minutes, until squash cubes are browned and tender, flipping every few minutes.
