These vegan sweet potato pancakes are incredibly rich and flavorful, made a hint of cinnamon and nutmeg, and are topped with orange infused maple syrup.

For the Orange Infused Maple Syrup
  • 1 cup maple syrup
  • 1/2 cup orange juice preferably fresh squeezed
  • 1 tbsp. orange zest
For the Vegan Sweet Potato Pancakes
  • 1 medium sweet potato baked and mashed (about 1 cup)
  • 2 1/4 cups unflavored almond or soy milk
  • 2 tbsp coconut oil melted
  • 2 tbsp. maple syrup
  • 1 1/2 cups spelt flour could sub all purpose
  • 1 tbsp. baking powder
  • 2 tsp. ground cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. salt
Make the Orange Infused Maple Syrup
  1. Heat all ingredients in small saucepan and bring to a low boil.
  2. Lower heat and simmer about ten minutes, or longer to get a slightly thicker syrup. You can prepare your pancakes while the syrup simmers.
Make the Pancakes
  1. Mix sweet potato, milk, coconut oil and maple syrup in medium mixing bowl.
  2. Mix flour, baking powder, salt, cinnamon and nutmeg in a separate, large mixing bowl.
  3. Add liquid ingredients to dry. Mix until just blended.
  4. Heat griddle or skillet over medium heat and coat with oil or cooking spray.
  5. Pour 1/3 to 1/2 cup batter onto heated surface. Cook until browned on each side, about 5 minutes per side, flipping very gently between sides.
