Ingredients
For the Peanut Clusters
  • cup roasted and salted peanuts
  • 2 tbsp. natural peanut butter
  • 2 tbsp. maple syrup OR sweet chili sauce or a combo of the two, depending on your desired level of spiciness
For the Peanut Dressing
  • ½ cup natural peanut butter
  • 2 tbsp. soy sauce
  • 2 tbsp. lime juice
  • 3 tbsp. maple syrup
For the Salads
  • About 8 cups of greens romaine and baby spinach work well here
  • 1 cucumber sliced
  • 1 avocado sliced
  • 4 scallions sliced
  • 1 batch of peanut clusters
  • 1 batch of dressing
Instructions
Make the Peanut Clusters
  1. Preheat oven to 350.
  2. Coarsely chop peanuts in food processor, or use my quick and dirty method by placing them in a zippy bag and crunching with a rolling pin or similar object. Careful not to bust a hole in the bag, as I frequently do. Add the peanut butter and maple syrup or chili sauce to the food processor or bag and pulse a few times or shake just until incorporated.

  3. Spread evenly on greased or parchment lined baking sheet. Bake 10-12 minutes, tossing once or twice during cooking.
Make the Peanut Dressing
  1. Whisk everything together, heating up or even adding a bit of warm water if needed to get an even blend.
Assemble the Salads
  1. Divide greens among four plates, and top with sliced avocado, cucumber, scallions, dressing and peanut clusters.
