These roasted pumpkin seeds are a delicious (and healthy way!) to enjoy some Halloween snacking!

Ingredients
  • 1 cup fresh pumpkin seeds
  • 1 tsp. soy sauce
  • ½ tsp. olive oil
  • 2 tsp. curry powder
Instructions
  1. Preheat oven to 350°F.

  2. Rinse and drain pumpkin seeds.
  3. Toss with remaining ingredients until well coated.
  4. Arrange in an even layer on parchment coated cookie sheet.
  5. Bake 6-7 minutes, or until they begin to darken.
  6. Remove from oven and allow to cool before digging in.
