  • ¾ cups unsweetened shredded coconut
  • ¼ cup organic brown sugar
  • ½ teaspoon salt
  • ½ cup natural creamy peanut butter
  • ¼ cup maple syrup
  • 3 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 1 ½ cups roasted and salted peanuts
  • 1 cup chopped dates
  1. Preheat the oven to 300° and line a baking sheet with parchment  paper.

  2. Mix the oats, coconut, sugar, and salt together in a large bowl.

  3. Mix the peanut butter, maple syrup, oil, and vanilla together in a medium mixing bowl.

  4. Add the peanut butter mixture to the oat mixture and stir until thoroughly incorporated.
