Red wine adds a flavor punch to this festive cranberry nut bread!

Ingredients
For the Bread
  • 2 cups whole wheat pastry flour could sub all purpose
  • ¾ cups brown sugar
  • 2 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 1 tsp. ground cinnamon
  • ¼ tsp. ground cloves
  • 1 tbsp. orange zest
  • ¼ cup vegan margarine melted
  • 1 cup red wine
  • 1 tsp. vanilla extract
  • 1 cup dried cranberries
  • ½ cup chopped walnuts
For the Orange Glaze
  • ½ cup powdered sugar
  • 1 tbsp. orange juice
  • 1 tsp. vanilla extract
Instructions
  1. Preheat oven to 350º. Grease or spray 9 x 5 loaf pan.
  2. In large mixing bowl, mix flour, sugar, baking powder, soda, salt and spices.
  3. Add zest, margarine, red wine and vanilla.
  4. Mix just until blended.
  5. Fold in berries and nuts.
  6. Pour batter into prepared loaf pan.
  7. Bake about 50 minutes, or until toothpick inserted into center comes out clean.
  8. While bread bakes, whisk glaze ingredients together in small bowl.
  9. Remove bread from oven and allow to cool completely before removing from pan.
  10. Drizzle with glaze.
