Bursting with sweet, juicy flavor and a hint of spice, this mango salsa is perfect on a veggie burger, over tacos, or eaten with chips for snacking! It's always a hit and super easy to make.

Ingredients
  • 2 cups diced (¼-inch) mango (about 2 large or 3 medium mangoes)
  • 1 cup diced red bell pepper (about 1 medium pepper)
  • ½ cup finely chopped cilantro
  • ¼ cup diced red onion
  • 1 ½ tablespoons freshly squeezed lime juice
  • 1 jalapeño pepper, seeded and minced
  • Salt and pepper, to taste
Instructions
  1. Stir the mango, bell pepper, cilantro, onion, and jalapeño together in a large mixing bowl.

  2. Add the lime juice and stir the mixture well.

  3. Taste-test and season with salt and pepper to taste. You can also add more lime juice or adjust any other seasonings to your liking.

  4. Serve immediately or chill for later.
