Creamy, delicious, and totally dairy-free! This vegan ranch dressing is made from cashews. Dip your veggies, drizzle it on a salad, spread it on a sandwich...or just put it on everything!

Ingredients
  • 1 cup raw cashews, soaked in water 4-8 hours, drained and rinsed
  • 1 cup water, divided
  • 2 tablespoons lemon juice, plus more to taste
  • ½ cup fresh parsley
  • ¼ cup chopped fresh chives
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 teaspoon salt, plus more to taste
  • ¼ teaspoon black pepper
Instructions
  1. Place the cashews and ¼ cup of water into the bowl of a food processor fitted with an S-blade.

  2. Blend until smooth, stopping to scrape down the sides of the bowl with a spatula as needed.

  3. Add the remaining ¾ cup of water and blend again until smooth and creamy.

  4. Add the lemon juice, parsley, chives, onion powder, garlic powder, salt, and pepper. 

  5. Pulse the food processor until the herbs are finely chopped and everything is well-mixed.

  6. Taste test and adjust any seasonings as needed.

  7. Serve immediately, store in a sealed container in the fridge for up to 5 days, or freeze for up to 3 months.
