Ingredients
  • 1 cup uncooked quinoa
  • 2 scant cups water
  • 2 cups diced cucumber
  • 1 cup diced tomato
  • 1 cup cooked or canned chickpeas, drained and rinsed
  • 1/2 cup pitted Kalamata olives, halved
  • 1/4 cup finely chopped fresh parsley, lightly packed
  • 1/4 cup finely chopped fresh mint, lightly packed
  • 1/4 cup chopped scallions
  • 1 large garlic clove, minced
  • 1/4 cup olive oil
  • 2 tbsp. freshly squeezed lemon juice
  • 2 tbsp. red wine vinegar
  • 1/2 tsp. salt, or to taste
  • black pepper to taste
Instructions
  1. Rinse the quinoa well under cold running water (you can skip this if the package tells you it's already rinsed). 

  2. Place the quinoa into a small saucepan with water and place over high heat. 

  3. Bring the water to a boil. Lower heat and cover. Allow to simmer, covered, until all of the water is absorbed, about 20 minutes. 

  4. Remove the pot from heat and allow to sit, covered, for 5 minutes. 

  5. Transfer the cooked quinoa to a medium bowl and allow it to cool completely.

  6. Stir remaining ingredients into quinoa. Taste test and adjust as needed.
  7. Serve immediately or chill until ready to serve.
