Ingredients
For the Apple Chips
  • 2 Gala apples, or another mild and sweet variety, such as Cortland or Braeburn
  • about 1 tsp. ground cinnamon
For the Chai-Spiced Apple Sweet Potato Soup
  • 2 tbsp. olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp. grated fresh ginger
  • 5 cups vegetable broth
  • 2 medium sweet potatoes, about 1 ½ lbs., peeled and diced into 1 inch cubes
  • 2 Gala apples, or another mild and sweet variety, such as Cortland or Braeburn, peeled and diced into 1 inch cubes
  • 2 tbsp. maple syrup
  • 1 tbsp. apple cider vinegar
  • 2 tsp. ground cinnamon
  • 1 tsp. powdered ginger
  • ½ tsp. black pepper
  • ¼ tsp. ground cloves
  • ¼ tsp. cardamom
  • salt to taste
Instructions
Make the Apple Chips
  1. Preheat oven to 225° and line 2 baking sheets with parchment.
  2. Using a very sharp knife or mandoline slicer, slice apples very thin. Remove any seeds. Arrange slices in a single layer on baking sheets and sprinkle with cinnamon.
  3. Bake 2 hours, flipping halfway through. Remove from oven and transfer to cooling rack to cool.
Make the Chai-Spiced Apple Sweet Potato Soup
  1. When the apple chips are almost finished baking, coat the bottom of a large pot with olive oil and place over medium heat. Add onion and sauté until softened, 5 minutes. Add garlic and fresh ginger and sauté 1 minute more.
  2. Add broth, apples and sweet potatoes. Raise heat to high and bring to a boil. Lower heat and simmer until sweet potatoes are very soft, about 15 minutes.
  3. Working in batches if needed, transfer mixture to a food processor and blend until smooth.
  4. Return mixture to pot and add maple syrup, cider vinegar, cinnamon, ginger, black pepper, cloves, cardamom and salt. Stir to incorporate. Thin with additional broth if needed. Place over medium heat and cook just until reheated throughout.
Serve
  1. Divide soup into bowls and top with apple chips. Serve.
