For the Thai Peanut Sauce

creamy natural peanut butter

agave

or maple syrup

soy sauce or tamari

For the Grilled Peach Sandwich

slices
good sandwich bread

small or ½ large peach
sliced thin

fresh basil leaves

olive oil

Whisk peanut sauce ingredients together in small bowl. Thin with a bit of water if desired, keeping in mind that it will soften up when grilled.

Slather bread slices with peanut sauce, then stuff with peach slices and basil leaves.

Coat a medium flat-bottomed skillet with oil and place over medium heat. Place sandwich into skillet and cook until browned on bottom, about 3-4 minutes. Flip and cook until browned on opposite side, 3-4 minutes.
