Rinse quinoa well under cold running water.

Place water in small saucepan over high heat. Bring to a boil. Stir in quinoa and lower heat. Cover and allow to simmer until all liquid is absorbed, 20 minutes. Allow to sit, covered, for another 5 minutes.

Preheat oven to 350º. Line 2 baking sheets with parchment.

Sitr banana, coconut oil and maple syrup together in a medium bowl.

Place 1 cup oats in food processor and grind to a powder. Add cooked quinoa, cinnamon, salt and baking soda. Pulse a few times to mix. Transfer to bowl with banana mixture. Stir just unilt blended. Fold in prunes, cacao nibs and pepitas.

Drop by rounded 2 tablespoonfuls onto baking sheets. Flatten slightly with the back of a spoon.

Bake 10 minutes. Transfer baking sheets to cooling racks and allow to cool completely. Store in airtight container or bag.
