These healthy quinoa cookies are made with cacao nibs, diced dried plums and crunchy pumpkin seeds. They're a healthy snack that's completely vegan and gluten free!

Ingredients
  • ½ cup quinoa
  • 1 cup water
  • 1 overripe banana mashed
  • ¼ cup coconut oil melted
  • 2 tbsp. maple syrup
  • 1 ¼ cup rolled oats divided
  • 1 tsp. ground cinnamon
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 1 cup Sunsweet® Amaz!n™ Diced Prunes
  • ¼ cup cacao nibs
  • ¼ cup pepitas
Instructions
  1. Rinse quinoa well under cold running water.
  2. Place water in small saucepan over high heat. Bring to a boil. Stir in quinoa and lower heat. Cover and allow to simmer until all liquid is absorbed, 20 minutes. Allow to sit, covered, for another 5 minutes.
  3. Preheat oven to 350º. Line 2 baking sheets with parchment.
  4. Sitr banana, coconut oil and maple syrup together in a medium bowl.
  5. Place 1 cup oats in food processor and grind to a powder. Add cooked quinoa, cinnamon, salt and baking soda. Pulse a few times to mix. Transfer to bowl with banana mixture. Stir just unilt blended. Fold in prunes, cacao nibs and pepitas.
  6. Drop by rounded 2 tablespoonfuls onto baking sheets. Flatten slightly with the back of a spoon.
  7. Bake 10 minutes. Transfer baking sheets to cooling racks and allow to cool completely. Store in airtight container or bag.
