Preheat oven to 350.

Line 12 muffin tins with papers. In medium mixing bowl, mix oats, flour(s), baking soda and baking powder.

In separate bowl, mash bananas well with fork or potato masher.

Add vanilla, maple syrup and coconut milk.

Whisk everything together well, and then add to dry ingredients. Mix until just blended.

Fold in pecans.

Divide mixture among muffin tins.

Sprinkle muffin tops with coconut.

Bake 23-27 minutes, or until tops just begin to firm and coconut begins to brown.
