These vegan sweet potato pancakes are soft, fluffy and full of flavor. Top them off with orange-infused maple syrup for a knock-your-socks off vegan breakfast!

Ingredients
For the Orange Infused Maple Syrup
  • 1 cup maple syrup
  • ½ cup orange juice preferably fresh squeezed
  • 1 tablespoon orange zest
For the Vegan Sweet Potato Pancakes
  • 1 medium sweet potato baked and mashed (about 1 cup)
  • 2 ¼ cups unflavored almond or soy milk
  • 2 tablespoons coconut oil melted
  • 2 tablespoons maple syrup
  • 1 ½ cups all-purpose flour
  • 1 tablespoons baking powder
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
Instructions
Make the Orange Infused Maple Syrup
  1. Heat all ingredients in small saucepan and bring to a low boil.
  2. Lower heat and simmer about ten minutes, or longer to get a slightly thicker syrup. You can prepare your pancakes while the syrup simmers.
Make the Pancakes
  1. Stir the sweet potato, milk, coconut oil and maple syrup together in a large mixing bowl.

  2. Whisk the flour, baking powder, salt, cinnamon and nutmeg together in a separate, large mixing bowl.

  3. Add the liquid ingredients to dry. Stir just until blended.

  4. Coat a griddle or nonstick skillet with oil and place it over medium heat.

  5. Pour ⅓ to ½ cup batter onto heated surface. Cook the pancake until browned on each side, about 5 minutes per side, flipping very gently between sides.

  6. Serve with orange-infused maple syrup.
